Taco Pizza 2

Do you ever have one of those days where you just need a few more hours to get everything done? Lately I’ve been feeling like that about entire weeks and months; it seems I always need more time to do this or that and more time to actually get some rest in between all the chores!

Though I don’t necessarily *feel* super stressed out (I am not gritting my teeth and clenching my fists…yet), I’m quite frazzled these days. Between work, wedding planning, blogging, creative projects and my everyday chores, by day’s end I feel tattered and worn. I realise this isn’t a problem specific to me, and there are plenty of people in the world with far greater issues than these. But as they say it’s all relative and lately I am feeling the strain of it all, which is typically made worse by the bi-polar Irish weather and all its resulting irritants (dampness, pollen, crazy traffic – ARGH!).

There are the necessary chores like grocery shopping and cooking, which I usually enjoy greatly. Last Sunday I spent hours in the kitchen making our usual baked oatmeal, baked ham (for Mountaineering Man’s sambos) and veggie curry with quinoa (for my lunches) plus a gluten-free brownie cake for my coeliac co-worker (just for fun) and a batch of vegan banana ice cream (just for fun). But on top of all the regular cooking the extras proved far too much work, and I didn’t enjoy it like I normally would. Because MM takes on most of the cleaning and laundry duties, I always assume I have enough time to do those pleasurable cooking projects – but somehow take on more than I can handle!

Moving to Ireland Raheny 3 Moving to Ireland Raheny 4

Back in May I left my humble little apartment in Drogheda and moved into Mountaineering Man’s humble little apartment in The Coombe. And then a couple of months ago we moved into a bigger apartment, a place that we can truly call our own.

We spent several weeks looking around at various Dublin neighborhoods, which I will admit was quite frustrating for me as I was still unfamiliar with many areas of the city. MM patiently drove me around Blackrock, Sandymount, Ballsbridge – all desirable areas on the south side – and then to a few of his favourite north side areas including Clontarf, where he once lived while still in college.

And then one day MM slipped in another neighborhood on our Daft.ie search list: Raheny. “Where is that??” I inquired, admittedly a bit annoyed. He explained that it was just north of Clontarf, on the DART line and close to the sea. Sounded nice enough, but I was exhausted from trying to educate myself on the 6-8 areas we’d already chosen and wasn’t keen to add another to my to-do list.

While some people find cooking to be the most stressful chore in the world, I find it relaxing and therapeutic. It’s something that sets me at ease and reenergizes my spirit, at the risk of sounding melodramatic! To me, there are few things in life more enjoyable than dabbling in the kitchen with some piano music in the background (Dustin O’Halloran is a new favorite, thanks to my friend Aoife for the recommendation!) with a glass of wine in one hand and a spatula in the other.

Life has been quite hectic for Mountaineering Man and me lately; it seems every weekend is booked with long-standing plans or some sort of obligation so it was a much-welcome relief when we found ourselves with no plans last Sunday. We went to Chapters Bookstore for a bit of browsing and then stopped into a cafe for coffee. For dinner we thought we’d hit one of the Mexican places in town, but found all four of them to be closed! So we did one better and hit the supermarket where we gathered some avocados, tortillas, tomatoes and a few other bits and headed home to cook.
